Do you like wings, but don't always want the boring old "hot" ones? This is a great recipe for making Parmesan wings. One of my family's favorites.
This is a fun recipe to make with kids!
What you need
12 chicken wings(or adjust recipe for more)
2 tablespoons olive oil
2 cloves of garlic
1 teaspoon dried oregano
juice of 1 lemon
salt and freshly ground pepper to taste
2 tablespoons grated Parmesan cheese
What to do:
Cut each wing at the joints, and you wind up with the wing tip (save for stock or toss), the middle portion and finally, the thickest part that looks like a little drumstick.
Place the cut-up wings in a bowl and add everything but the Parmesan cheese. Toss and allow to marinate for about 30 minutes.
Place the chicken pieces on a broiler pan. Broil in the top part of the oven on high broil. Turn and baste with the remaining marinade every few minutes. When the are browned nicely, sprinkle with Parmesan and allow the cheese to melt and brown. Watch closely so that the cheese doesn't burn.

I am beginning to think that here in the US we do lunch all wrong. It has become a heavy meal eaten on the run with little time to consider the mid-day, much less the meal. It need be nothing more than a crust, a leaf, and glass of wine. I am becoming convinced that man needs sleep more than food in the middle of the day. A piece of cheese a bottle of beer and a twenty-minute nap would solve more of the problems of industry, politics, and the church than all the pretentious martini lunches, or fast food gut bombs ever will.
